
INGREDIENTS:
1kg mutton,
2tbs ginger garlic paste,
1-2tbs salt,
5-6 green cardamom,
5-6 cloves,
1tbs black pepper,
2 black cardamom,
2 star anise,
1 piece mace,
1/4inch piece of nutmeg,
2piece ginger dried,
1&1/2tbs fennel seeds,
1tbs cumin seeds,
3-4long pepper,
2 bay leaves,
1tbs coriander leaves,
2 cumin sticks,
1tbs salt(to taste),
1tbs chilli powder,
1/2tbs carom seeds
1tbs turmeric powder,
1tbs kashmiri red chilli,
3tbs wheat flour,
3tbs gram flour,
1 cup cooking oil,
1lemon(sliced),
1tbs ginger(sliced),
1tbs coriander leaves etc.
INSTRUCTIONS:
Prepare all ingredients:
1.Masala: First of all take a pane add green cardamom, cloves, black pepper-crons, black cardamom, star anise, mace, nutmeg, dried ginger, fennel seeds, cumin seeds, long pepper bay leaves, coriander leaves cumin sticks, carom seeds, and dry fry on medium flame until fragrant(2mins). Let it cool, add in grinder and grind it well.
2.Wheat and gram flour: Take a pane add gram flour and wheat flour and cook till fragrant(2mins).
3.Combine all things: Add salt, red chilli, kashmeri red chilli, turmeric powder in grind masala and again grain it well. Add wheat and gram flour in masala and some water(as required) and mix it well.
4.Beef: Take a cooker pressure add meat and water (as required to meat) and cook(boil) until meat is tender well.
COOKING TIME:
Make nihari: Take a pane add cooking oil and heat it. Add meat and cook till meat change color add ginger garlic paste and cook 2-3 mins add prepared masala and cook 10-12mins.
GARNISHING: Garnish the nihari with lemon, ginger, coriander leaves and nihari is ready for dinning.
SEVER: Serve nihari with any kind of bread.
